Air Fryer Blueberry Hand Pies

These air fryer blueberry hand pies are super simple to make and super delicious. It uses fresh blueberries or frozen blueberries and flaky puff pastry.

These little homemade hand pies are also called puff pastry turnovers. It’s one of those desserts that looks impressive but it is actually a super easy recipe to make.

They’re absolutely delicious too.

About these little pies

They are made with a filling placed on pastry and then folded over and sealed. You can have all sorts of fruit filling in these air fryer hand pies, and they make the perfect dessert or afternoon treat.

It means you can have the taste of a slice of pie without needing to make a whole pie.

You can use puff pastry sheets from the grocery store (or make your own homemade pastry), and fresh or frozen berries. That way, these easy blueberry hand pies can be made all year round.

Blueberry pie filling

Blueberries make a delicious pie filling. They bring lots of color and flavor. The homemade blueberry filling is cooked a bit before being used in the pie, which means you can easily use fresh or frozen blueberries.

Most of the time frozen fruit is picked when it is at its peak condition which means the quality of the fruit is very good.

The filling is really easy to make. Simply combine blueberries, cornstarch, lemon juice and lemon zest, sugar, and salt in a small saucepan and cook it down, slowly at first, then on higher heat until thick and glossy.

The flaky pie crust

The easiest way to make these little hand pies is to use store-bought puff pastry sheets. They work super well and it cuts down on a lot of time. If you feel like using a homemade pie crust, you can use the rough puff pastry recipe used in these apple turnovers.

Ingredients

You just need a handful of ingredients for this easy handheld treat. Find the ingredient amounts listed in the printable recipe card at the bottom of this post. Here is a rundown of what you will need.

  • Blueberries. Fresh or frozen.
  • Sugar (or another sweetener) – Granulated sugar is used in this recipe but you can use another sweetener if you like.
  • Lemon juice and lemon zest – Lemon enhances the blueberries’ natural flavor.
  • Ground cinnamon
  • Vanilla extract
  • Salt – Just a pinch to balance the sweetness.
  • Cornstarch or arrowroot – To thicken the filling. If you’re wanting to freeze the blueberry filling, use arrowroot instead of cornstarch.
  • 2 sheets of flaky puff pastry.
  • One egg for the egg wash.

Method

The blueberries

In a medium saucepan combine the blueberries, sugar, lemon juice, lemon zest, cornstarch and cinnamon.

On low heat, stir until the blueberries begin to release some of their liquid. Turn the heat up to medium heat and keep stirring regularly until the mixture heats up thoroughly. Don’t forget to stir or the cornstarch mixture will begin to cook prematurely at the bottom of the pan.

Once the mixture begins to bubble, let it boil while continuously stirring. Do this for a full minute until it’s thick and glossy. It will lose its cloudy appearance and become clear and thick.

Pour the hot blueberry mixture into a small bowl and let it cool right down to room temperature.

Assembling

When the filling has cooled, lay the puff pastry sheets onto a lightly floured surface. Cut each sheet into 4 equal squares.

In a small bowl, whisk together an egg with a tablespoon of water for the egg wash.

Spoon around 1 1/2 tablespoons of the blueberry filling onto one corner of each pastry dough square. Brush around the squares with a little egg wash. Fold the pastry over the filling on each to make a triangle. Crimp the edges of the pastry triangles with a fork to seal them.

Brush the top of each hand pie with more egg wash, then use the tip of a knife to create small slits in the tops to allow steam to escape.

Place 4 puff pastry hand pies in a single layer in the air fryer basket. Air fry at 375℉/190°C for around 10-11 minutes until golden brown. The exact cook time will depend on your air fryer. While they are cooking, the remaining pies can be stored in the fridge.

Once cooked, remove them from the air fryer basket and place them on a cooling rack, Cook the remaining hand pies.

Glaze

The finished air fryer blueberry hand pies are glazed with a simple vanilla glaze. In a small bowl whisk together powdered sugar, vanilla extract and milk to create a smooth and pourable glaze.

Drizzle this over the tops of the pies.

Storing

Leftover pies can be stored in an airtight container at room temperature for up to 2 days, or in the fridge for up to 5 days. They can also be frozen for up to 3 months in a freezer-safe container.

They can be reheated in the air fryer.

The unbaked pies can be frozen too, and baked from frozen.

Notes

The unbaked pies can be frozen for future desserts. Air fry from frozen, no need to thaw. They may need an extra minute of cooking.
