Air Fryer Blueberry Hand Pies

These little homemade hand pies are also called puff pastry turnovers. It's one of those desserts that looks impressive but it is actually a super easy recipe to make.

In a medium saucepan combine the blueberries, sugar, lemon juice, lemon zest, cornstarch and cinnamon.

On low heat, stir until the blueberries begin to release some of their liquid. Turn the heat up to medium heat and keep stirring regularly until the mixture heats up thoroughly.

Once the mixture begins to bubble, let it boil while continuously stirring. Do this for a full minute until it's thick and glossy.

Spoon around 1 ½ tablespoons of the blueberry filling onto one corner of each pastry dough square. Brush around the squares with a little egg wash.

old the pastry over the filling on each to make a triangle. Crimp the edges of the pastry triangles with a fork to seal them.

Brush the top of each hand pie with more egg wash, then use the tip of a knife to create small slits in the tops to allow steam to escape.

Air fry at 375℉/190°C for around 10-11 minutes until golden brown.

The finished air fryer blueberry hand pies are glazed with a simple vanilla glaze.
